About the Instructor:
David Birowski’s life in the restaurant industry started when he was 14 years old as a dishwasher. He spent the next six years working as a server or a cook until he began bartending at 20. Over the next four years, David became an expert on craft beer and tasting notes, working at famous craft beer bars such as Chelsea’s Tavern, Ernest and Scott’s taproom, and Dogfish Head Brewery. At the age of 24, David wrote his first cocktail menu at Santa Fe, a fine dining authentic Mexican restaurant in Wilmington Delaware. David has continued to write cocktail menus and run bar programs for the past eight years and has won several awards and contests including Herradura Tequila’s best east coast Margarita contest two years in a row. David now works as the on-staff mixologist at New Liberty Distillery in Old Kensington Philadelphia where he is well known for his love and execution of classic cocktails such as the Old Fashioned, and for having an ever-inventive seasonal cocktail menu. David has consulted and helped launch bar programs for various restaurants and catering companies throughout Virginia, Maryland, Delaware, and Pennsylvania. David has trained dozens of bartenders and has taught several cocktail classes in Wilmington and Philadelphia.
