Javelin, a restaurant in Fairmount, will host a one-night Maguro Kaitai experience, also known as a tuna cutting ceremony, on Tuesday, August 18, beginning at 5 p.m. The event will be led by Chef Carlos Wills of Ogawa Sushi & Kappo and will also feature Cambodian-style appetizers and cocktails from mixologist Richie Tray. Javelin is located at 1811 Fairmount Avenue.

The restaurant recently drew attention for hosting the first LeBron James mural painted in Philadelphia following his signing with the 76ers.

Upon arrival, guests will be served South Asian-inspired cocktails made with ice from Philadelphia Craft Ice Co. The beverage menu, curated by Tray, includes a banana boulevardier, a pandan sour, and a Southeast margarita made with herb-infused lime juice and green mango agave.

The main program will begin promptly at 6 p.m., when Wills will speak to guests about the Maguro Kaitai tradition before dissecting a 250- to 300-pound bluefin tuna. The meal will include papaya salad, karaage chicken and Cambodian-style crudo, along with several courses of tuna, including sashimi; tuna marrow with uni and caviar; tuna nigiri akami chutoro; spicy toro hand rolls topped with uni; and tuna tacos, among other courses. Additional courses will feature caviar from Caviar XS, along with ingredients imported directly from Japan.

Albert Zheng, a partner at Javelin and Ogawa Sushi & Kappo, said the collaboration with Wills had been in the works for some time. “A Maguro Kaitai show with chef Carlos Wills is something that we’ve been hoping to schedule for a while,” Zheng said, adding that he was looking forward to seeing Tray incorporate his Cambodian heritage into the evening’s cocktail menu.
