Fairmount’s Newest Japanese Restaurant, Javelin, is Hosting a Five-Course Collaboration Dinner with Chef Alex Vazquez
Fairmount’s Japanese restaurant and sushi bar, Javelin (1811 Fairmount Avenue), will host a special five-course collaboration dinner with up-and-coming Chef Alex Vazquez on Monday, October 6, 2025, beginning at 5 p.m. The one-night-only event marks the start of Javelin’s new chef collaboration series, designed to spotlight the next generation of Philly’s culinary talent.
Chef Vazquez brings an impressive background to the table. He honed his craft in some of the city’s most acclaimed kitchens, including Vernick Food & Drink (2015–2017) and as sous chef at Friday Saturday Sunday (2017–2021). For this collaboration, Vazquez teams up with the Javelin culinary team to create a refined menu that blends bold technique with layered flavors.
The five-course menu, priced at $85 per person (plus tax and gratuity), begins with an amuse-bouche, followed by:

Kanpachi with tigre de leche, granny smith apple, and chili crisps

Braised oxtail wraps with ox juice, scallion pancake, shiso, and pickled daikon

Black cod with uni, nori butter, mushroom dashi, and bok choy

Milk bread mille-feuille with honey butter and salted dulce de leche
An optional beverage pairing will also be available.
