Popular Pop-up “Primary Plant Based” Opens a Brick and Mortar Restaurant in Fishtown
Chef Mark McKinney has gone full-service with his one-time pop-up Primary Plant Based and launched a polished all-vegan concept in Fishtown boasting a robust menu of seasonal, health-forward fare with global influences.
McKinney, former Executive Chef of Royal Tavern, Cantina Los Caballitos, Cantina Dos Segundos, Khyber Pass Pub and Triangle Tavern, is a long-time vegan and has been raring to open Primary Plant Based in a permanent location following the success of the pop-up in late fall and early winter of 2020.
“I’m thrilled to finally open a permanent location for Primary Plant Based,” McKinney said. “It’s important to me to operate a business that is sustainable as possible. Purchasing only local ingredients. Our employee model is all inclusive. We respect everyone’s right to make a decent living and have guarantees in place to do so. We want to make our little corner a happy place starting within. This reflects in our service style and overall approach to our guests and community.’
Fans of McKinney will be glad to see a slew of Asian-influenced, locally sourced dishes on his opening menu including small plates such as Yuba Noodle Soup, Pumpkin Cornbread, Masa Ball Soup, and more hearty offerings including Mushroom & Eggplant Umami Burger, Maple Glazed Mushrooms, and Char Sui Brussels Sprouts. An array of sweet treats includes Glazed Apple Fritters, Chocolate Chia Pudding, and Maduro Banana Split. Primary Plant Based is a BYOB and offers refreshments including Agua Frescas [tamarind, hibiscus, or guava], La Colombe Coffee, and Galvanina Organic Soda.
Primary Plant Based is now open for dine-in and take out. The charming restaurant located at 161 W. Girard Ave holds a capacity of 30 seats and will offer sidewalk seating during the warmer months. Currently, Primary Plant Based is open Wednesday through Sunday from 4 – 9 pm, and reservations can be made by clicking here. Proof of vaccination is required for dine-in. Hours to expand in the near future.
