Paffuto’s Panzerotti Series Returns, and Some of Your Favorite Restaurants Will Be Popping Up to Add Their Own Twist

Paffuto ( 1009 S 8th St.) is once again turning one Italy’s most beloved hand-held dishes into a citywide culinary collaboration. Beginning in late February and running through early June, the restaurant is reviving its popular Panzerotti Series, inviting some of Philly’s most creative chefs to reinterpret the classic stuffed, fried dough through the lens of their own cultures and cuisines.

Every other week, Paffuto will feature a new panzerotti collaboration that blends the restaurant’s Italian roots with the guest chef’s background—bridging terroir, tradition, and technique in one crave-worthy bite. The lineup spans flavors inspired by Puerto Rican, Portuguese, Italian-American, Levantine, Southern, and other global traditions.

The series celebrates both experimentation and community, highlighting chefs from some of the city’s most popular kitchens while giving diners a reason to keep coming back throughout the spring.

Panzerotti Series Lineup

Feb 26 – Mar 1:
Mike & Eylonah Mae Strauss
Jubilee Pie- a sweet take: mango and peach with ricotta—described as “a McDonald’s apple pie, but with mango.”

Mar 12 – Mar 15:
Gilda
Portuguese-inspired panzerotti filled with molho de leitão (slow-roasted suckling pig).

Mar 26 – Mar 29:
Sulimay’s Restaurant
A brunch classic reimagined: corned beef hash, soft scrambled eggs, and Cooper Sharp cheese.

Apr 2 – Apr 5:
Scampi
Liz’s chicken and andouille gumbo brings bold Southern flavors to the panzerotti.

Apr 16 – Apr 19:
Liberty Kitchen
Pork roll, soft scrambled eggs, Cooper Sharp, and Liberty Kitchen’s signature hoagie relish.

Apr 30 – May 3:
Fiore
Erbazzone-inspired filling with Swiss chard, Parmesan, nutmeg, and ricotta.

May 14 – May 17:
Farina Di Vita
Italian Market Festival surprise—details revealed during the run.

May 28 – May 31:
Amy’s Pastelillos
Shredded beef, sweet plantain, mozzarella, and La Parchita hot sauce.

June 4 – June 7:
Emmett
Smoked lamb neck merguez with farmhouse feta and pine nut muhammara.

Running through early summer, Paffuto’s Panzerotti Series is designed for repeat visits—each collaboration offering a limited-time experience that reflects both the guest chef’s story and the shared creativity of Philadelphia’s food scene. Whether savory or sweet, traditional or unexpected, each panzerotti is a snapshot of the city’s culinary diversity—served hot, handheld, and only for a few days at a time.
