New Plant-Based Pop-Up Takeout Restaurant “Primary Plant Based” Will Operate Out of Khyber Pass Pub
Primary Plant Based will open on November 20. This new pop up comes from Mark McKinney, the executive chef of Royal Tavern, Cantina Los Caballitos, Cantina Dos Segundos, Khyber Pass Pub and Triangle Tavern.
Chef McKinney is equally renowned for his delicious vegan dishes as he is for his famous Royal Burger at Royal Tavern. McKinney, a long-time vegan, has wanted to do a plant-based concept for several years. As it has for many of us, the coronavirus pandemic of 2020 has given Chef Mark the opportunity to consider what’s most important to him. Expect health, sustainability and diversity to be some of the hallmarks of Primary Plant Based.
“I’m very excited to launch Primary Plant Based,” McKinney said. “Vegan cuisine is particularly close to me. I’ve been vegan most of my adult life. My vegan food is health forward with major Asian and world influences.”
Primary Plant Based will feature a menu that changes frequently and reflects the season. Dishes on McKinney’s first menu include Sweet Potato Toast (think shrimp toast), Spicy Peanut Mole Noodles, Maitake Mushrooms & Grits, Rou Jia Mo “meat sandwiched in bread” and Baked Churro Donuts with chocolate ganache.
“I’m thrilled to be a part of this pop up,” says Stephen Simons, co-owner of Primary Plant Based, Royal Boucherie and Royal Sushi & Izakaya. “I know Chef Mark is loved in the vegan community, but I expect many of our guests to be vegan-adjacent or veg-curious. I’m a meat eater, but at least once or twice a week my family and I like to eat a completely plant-based meal. I think that Primary Plant Based will make this a lot easier for us and others looking for some healthy and delicious dining options.”
Primary Plant Based shares a kitchen with Khyber Pass Pub (56 S 2nd St.) and is available for takeout through Khyber. Delivery is available through DoorDash.com. Primary Plant Based will be open from 3-9 pm, Friday, Saturday and Sunday beginning November 20, 2020.
