Aqimero Honors Día de los Muertos With Month-Long Special Prix-Fixe Menu, Signature Cocktails, & Ofrenda
Aqimero by Chef Richard Sandoval will host a month-long Día de los Muertos celebration this fall, running October 6 through November 3. The restaurant will offer a limited-time prix fixe menu themed around El Sol, the sun, which the restaurant describes as a symbol of life, nourishment, fire, color and time.
Drawing on Mesoamerican traditions and the warmth of the season, the menu features dishes and cocktails inspired by the sun’s journey from dawn to dusk, with themes of remembrance, renewal and connection.
Signature Cocktails
- Sol: Sparkling wine, pomegranate liqueur, marigold syrup, mango purée and orange bitters
- Elote Mezcalita: Mezcal, lime, tamarind, Nixta corn liqueur, totomoxtle salt and charred baby corn
- Sangría: Red wine, aged rum, piloncillo, grenadine, agave, passion fruit, cinnamon and mango
- Punch Calavera (zero proof): Hibiscus syrup, cinnamon tea, guava, fresh orange and marigold petals
Featured Dishes
- Luz del Mar: Salmon, sea bass, saffron aguachile, mango, relish, macha salsa, crispy sweet potato and marigold
- Fuego del Sol: Achiote-braised short rib, charred poblano, cheese enchilada, plantain purée, zucchini, blossom sauce, green zucchini and affilla cress
- Amanecer: Piloncillo pumpkin crème brûlée, salted caramel ice cream and pepita brittle
On Wednesday, October 21, at 7 p.m., Chef Richard Sandoval and his son, Giancarlo Sandoval, will host a one-night-only Día de los Muertos dinner at Aqimero. The three-course tasting menu is paired with beverages inspired by El Sol, with each course representing a different stage of the sun’s journey from dawn to dusk. The setting includes Aqimero’s ofrenda and a communal atmosphere meant to honor those who came before and the traditions that keep their memories alive.
Chef Richard Sandoval said Día de los Muertos is a special time for him as a celebration of life, family and heritage. He said this year’s menu explores the holiday through El Sol, the warmth, energy and light that connect generations, and that he looks forward to sharing the traditions and stories that bring people together.
