New Restaurant, Alice Opens in the Italian Market Featuring an Emphasis on Charcoal Grilling

Chef Owner Dave Conn announces that his first restaurant, Alice is now open and accepting reservations. Located at 901 Christian Street, in the Italian Market.  Alice had its soft opening on June 22nd and features a 60-seat space including outdoor café seating and bar seating, with a front row seat to the open kitchen and an indoor charcoal oven.

Alice is named for Dave Conn’s late mother, who was a “huge foodie” and inspired him throughout his career. The cuisine is seasonal American. The restaurant has a liquor license and bar features natural wines, made to order cocktails, and craft beer, as well as non-alcoholic options.

This is Dave Conn’s first time as chef owner. AAMP created the original concept design, and Dave’s wife Sarah is his partner and refined and finished all design elements. Longtime Graces Group colleague Robert Scully serves as General Manager. Artwork is paper and plaster florals created by family friend and local artist Ronni Nicole.

The menu is seasonal American with a heavy emphasis on charcoal grilling. Many of the dishes were developed in the Conn’s home kitchen during the pandemic. “We built the restaurant to appeal to a broad audience. It is a casual neighborhood setting that delivers a level of refinement that makes it great for a special occasion. The menu is seasonal ingredient driven and each dish is simple with a beautiful balance. The menu layout is listed cold to hot with portion size small to large. All items are shareable, and we hope guests will enjoy the interaction that comes from trying new things together.”

Standout dishes include soft shell crab and a Moroccan inspired bold and flavorful Colorado lamb rack as well as seasonal vegetables. Three naan flatbreads provide a fun use of the charcoal oven and a versatile canvas for seasonal changes to garnishes.

“The vibe is a blend—the restaurant is cozy and intimate—it is at once dressy, sophisticated but casual and relaxed,” said Dave Conn. “It is a neighborhood restaurant that one wants to come in from suburbs to try. It is lively, elegant, warm, and familial, with familiar food that are prepared in unfamiliar ways to create new tastes to explore. We are a neighborhood restaurant that can deliver elevated hospitality and cuisine that you can look forward to it.”
