Fabrika is Opening the All-New Family Friendly Outdoor Space “Terrassa”
The owners of Fabrika, the acclaimed Fishtown restaurant/cabaret and entertainment venue, are unveiling a new concept underneath a plexiglass-covered outdoor space attached to the converted former ice cream machine factory. Terrassa is a 65-seat outdoor industrial-chic space bordering Frankford Avenue that, unlike the inside, will offer a more casual, family-friendly menu of international and shareable plates centered around Chef Shain Wancio’s handmade folded flatbread skewers, which are loaded with exotic flavors.
The name of the restaurant is both a nod to the location (a terrace and garden) and the city by the same name in Spain whose cuisine and culture is a mixture of many influences. The menu riffs off of Mediterranean, Spanish, and Latin flavors. “I didn’t want to pigeonhole our dishes,” explained Wancio. “Our team and the neighborhood is made up of an incredibly diverse group of people, and I wanted to reflect that as much as possible in our cuisine.” The anchor of the menu is the house-made warm folded flatbreads that guests will enjoy, which are filled with a variety of grilled meats called “shish” (Turkish for kebabs). Terrassa sources the bolted hard wheat flour for the flatbread from Doylestown’s historic Castle Valley Mills. “This flour is grown and milled in the same town I went to high school in, and I can smell and taste home when we’re baking – it’s an incredibly evocative experience,” said Wancio.
Menu highlights include Whipped Feta with Grilled Watermelon, Cucumber & Strawberry ($15); and Israeli Style Hummus with Tehina, Lemon, Pita ($13) for starters. Larger plates include “Shish” served on freshly baked flatbread with local greens and cucumber salad. The soft pita-style bread is filled with a protein or vegetarian option: Chicken Makrut – Lime Yogurt with Aleppo ($16); Merguez Kofta – Black Baba Ganoush & Feta ($17); Hanger Steak – Piquillo Romesco ($21); Shrimp Al Pastor – Charred Pineapple with Ancho Piri Piri ($19); Halloumi and Heirloom Tomato with Pistachio Pesto ($15); and King Oyster Mushroom – Crispy Chickpea & Green Tehina ($14).
Dessert highlights include Butterscotch Budino – Puffed Rice, Coconut & Grilled Plum ($12); and S’mores Freeze Queen – Smoked Graham Crackers & Salted Single Source Chocolate ($12).
The beverage program includes a selection of specialty cocktails made from local craft spirits, including a Gin Blossom Flight – a build-your-own-cocktail experience featuring neighboring Bluecoat and Elverson, PA’s Revivalist Spirits: Revivalist Equinox, Revivalist Dragon Dance, Bluecoat Gin, and Bluecoat Elderflower Gin served with a variety of Fever-Tree mixers and assorted Herbs and edible flowers ($25).
Owners Ylia Dzlieri, Lasha Kikvidze and Boris Khanataev describe the vibe as super relaxed, inclusive and dog-friendly with a DJ spinning tunes nightly. Its’ aesthetic is a beautiful mix of greenery and an industrial urban palette that allows guests to escape the city while still feeling rooted in one of the best neighborhoods in America.
Located at 1108 Frankford Avenue (adjoining Fabrika with a separate entrance), Terrassa is open Wednesdays through Saturdays from 5 to 11 p.m.
