Entrepreneur Darlene Jones may have just figured out how to get more children in her West Philadelphia neighborhood to eat their vegetables. The celebrated chef and businesswoman has altered her fried chicken recipe to include puréed vegetables in the batter, and will begin offering buckets of her vegetable-infused fried chicken at Star Fusion Express, located at 5178 Parkside Avenue, on Friday, October 1st.

In order to create the healthier spin on the beloved comfort food classic, Jones marinates the chicken in raw pressed carrot, celery, kale, and cucumber juices, along with bay leaves, vinegar, pickling spices, salt, and pepper, and then uses the vegetable juices in her batter to create the crispy and juicy finished product.

“I recently heard someone say that ‘calories are cheap but nutrition is expensive,’ and it really bothered me,” said Jones. “Hearing that got me thinking about how to make my menu items more nutritious for my community, so I started thinking about how I could alter one of our most beloved items to make it healthier, and after a little experimentation I feel we are introducing a delicious new spin on fried chicken that will provide a variety of vitamins and nutrients to those who enjoy it.”

“You can find fried chicken almost everywhere these days, but vegetable-infused fried chicken adds another element to the dish,” said Jones. “It gives a unique and really delicious spin to a classic favorite, while also adding additional nutrients and other health benefits from using the vegetables. I am really excited to introduce this to our customers, as I expect this to be very popular amongst many parents in the neighborhood.”

Buckets of eight thighs and drumsticks will be available for $12.95 at Star Fusion Express.
