Insomnia Cookies is Selling Irish Potato Cookies in Time For St. Patrick’s Day!
If you were unaware Irish Potatoes were created right here in Philly so it was only right that Philly-based Insomnia Cookies share this Philly tradition with the world.
In a recent social media announcement Insomnia Cookies announced the upcoming release of their Irish Potato cookies which they say is based off their popular snickerdoodle cookie. To give it that Irish Potato flair, Insomnia added coconut flakes and cream cheese chips and lots of cinnamon. The new cookie which was created to celebrate St. Patrick’s Day will be available at stores and for delivery.
The Irish Potato Cookie is part of their new spring cookie line-up set to be available March 8th. Other limited edition treats they plan to sell are Classic Confetti (rainbow sprinkles and Hershey’s vanilla chips) and Carrot Cake (lush cream drops, bites of real shredded carrot, sweet cinnamon goodness).
Insomnia Cookies was founded in a college dorm room in 2003 at the University of Pennsylvania, by then student, Seth Berkowitz. Since then Insomnia has expanded to over 100 locations including New York and Florida.
