Philly based Chef Lou Boquila of Audrey Claire is back with another edition of his Pelago Pop-Up series. Known for selling out in a mater of minutes this is more of a hurry-up and register than an article. Registration for his upcoming Pelago Pop Up: Keepin’ It Fresh pop up dinner on June 29th begins Monday at 2 pm.
So what can you expect this time around? Well for starters “a menu inspired by the team at our host restaurant Helm centered around sustainably-caught seafood and hyperlocal veggies in West Philadelphia born n raised.”
Due to the particular seasonality of this dinner, Chef Lou is still putting the finishing touches on the fine details of the menu. In the test kitchen, but they have some “West Philly Express” stewing, using greens fresh from Farm 51 and cooked down with some coconut milk, a little chili, and some shrimp paste. Mom approves!
