Oloroso is Collaborating With Chef Liz Grothe of Couch Café For a One-Night-Only Filipino Boodle Fight
First and foremost, those not familiar with the term, “Boodle Fight” is coined from American soldier slang, reflecting a communal dining style reminiscent of how soldiers would share meals in a familial setting, like to a Kamayan feast, also characterized by communal-style dining of Filipino food. With that being said, Spanish tapas spot Oloroso (1121 Walnut St.) just announced they will be hosting their very own Boodle Fight Night. This collaborative Filipino feast from Oloro alumnus and noteworthy Chef Elizabeth “Liz” Grothe of Couch Café and Oloroso’s Executive Chef Jason Peabody will take place on Monday, January 22.
Since departing from Oloroso, Grothe ventured into launching her own supper club held in her own home — aptly dubbed Couch Café — with each dinner presenting a different multi-course tasting inspired by various themes and cuisine. Grothe, a Filipino American, contributes her innovative, new-school techniques shown in each Couch Café dinner to the menu for Boodle Fight Night, complemented by friend and mentor Peabody’s wealth of old-school experience and traditional Spanish culinary methods, creating a truly familial and flavorful feast.
“I am absolutely thrilled to welcome Liz back into the Oloroso kitchen, particularly for this special collaboration,” expressed Peabody. “This dinner, like a Kamayan feast, will feature a lot of courses, a lot of variety, fatty food, and comfort food. I am truly honored to play a part in Liz’s return back to her roots in more ways than one.”
For $85 per person, guests are invited to partake in a joyous exploration of familial connections, as they immerse themselves in the robust fusion of influences found in Filipino and Spanish cuisine and culture. For those seeking an elevated experience, an optional wine pairing curated by in-house sommelier Gordana Kostovski is available at an additional $45 per person. In addition, optional add-ons to the family-style dinner includes Jolli Spaghetti and Ube Hand Pie, each priced at $15 per dish.
“Oloroso is the first professional kitchen I worked in,” Grothe shared. “Jason played a significant role in the culinary foundation upon which I build. I really want people to feel the familial bonds that Jason and I share through food. He’s more than a mentor; he’s like a father and brother combined, and a dear friend.”
Reservations for Boodle Fight Night are highly encouraged and can be made via RESY with two limited seatings at 5:30 pm and 8:00 pm.
